A Little Bit of Everything Chili Recipes

by Sandy Lynn McGuire
(Waterford, PA 16441)

Ground Beef
Kidney Beans
Onion--chopped
Green Pepper--chopped
Celery--sliced thin
Diced Canned Tomatoes
Tomato Sauce
Chili Powder
Pepper
Salt

In a large frying pan brown the ground beef, adding the onion, green pepper, and celery. When the meat is no longer red, drain the grease and place in a large stock pot. Put in your kidney beans, diced tomatoes, tomato sauce, chili power and salt and pepper to taste. Cook on high till it starts to boil, watch carefully and stir to make sure it doesn't burn. When it begins to boil, turn it down to low and let it simmer for about a hour and a half, check it occasionally and stir. When ready place in bowls and serve with crackers and perhaps a little shredded cheese for the top and enjoy a nice and heart chili on those cold winter days.

I only list the above ingredients not how much it takes because it is more of a preference thing or depending on how many people you have. This is my personal recipe that I have developed over the years as my families tastes have changed or matured. The last new ingredient that I added was Celery which is my oldest daughters contribution. At first I thought that was kind of funky but it really does wonders. I hope that you all will try it and enjoy it as much as we have.
