Apple Muffin Recipe, Applesauce Muffin Recipe & Pumpkin Muffin Recipe are Popular Muffin Recipes


An apple muffin recipe can be completely changed by adding other ingredients such s cinnamon, raisins, oatmeal, cheese and even bacon. Try the following recipes.



CHEESY BACON AND APPLE MUFFINS


  • 2 Cups flour

  • ¼ Cup sugar

  • 4 Teaspoons baking powder

  • ½ Teaspoon salt

  • 1 Cup milk

  • 1/3 Cup melted butter

  • 1 Beaten egg

  • ½ Cup finely chopped unpeeled apple

  • ¾ Cup shredded Cheddar cheese

  • 2/3 Cup crisp cooked bacon, crumbled

Preheat oven to 400F degrees.


Butter 18 cups in muffin pans.


Sift together the flour, sugar, baking powder and salt into a large bowl.


In a small bowl, combine the milk, melted butter and egg: mix together. Stir the egg and milk mixture into the dry ingredients just until moistened.


Fold in the apple, cheese and bacon and spoon into muffin cups.


Bake for 15 to 20 minutes or until golden brown.


Remove from pan and cool on rack.






APPLESAUCE MUFFIN RECIPE


  • 1 ½ Cups rolled oats

  • 1 ¼ Cups flour

  • ¾ Teaspoon cinnamon

  • 1 Teaspoon baking powder

  • ¾ Teaspoon baking soda

  • 1 Cup chunky applesauce

  • ½ Cup milk

  • ½ Cup brown sugar

  • 3 Tablespoons vegetable oil

  • 1 Beaten egg


Topping:


  • ¼ Cup rolled oats

  • 1 Tablespoons brown sugar

  • ¼ Teaspoon cinnamon

  • 1 Tablespoon melted butter

Preheat oven to 350F degrees.


Line muffin pan with paper liners or lightly grease.


In a large bowl combine the rolled oats, flour, cinnamon, baking powder and baking soda.


Add the applesauce, milk, brown sugar, oil and egg. mix just until moistened.


Fill muffin cups 2/3 full; mix topping.


Topping: Instructions


Combine the oats, brown sugar, cinnamon and melted butter. sprinkle evenly over muffins before baking.


Bake 20 to 22 minutes or until pick comes out clean.

The following apple muffin is delicious by adding pumpkin and a streusel topping.


PUMPKIN APPLE STREUSEL MUFFINS


  • 2 Cups sugar

  • 2 ½ Cups flour

  • 2 Teaspoons cinnamon

  • ½ Teaspoon ginger

  • 2 Beaten eggs

  • 1 Cup conned pumpkin

  • ½ Cup vegetable oil

  • 2 Cups peeled diced apples

  • 1 Teaspoon baking soda

  • ¼ Teaspoon salt

  • ¼ Teaspoon ground cloves

  • ¼ Teaspoon ground nutmeg


Topping:


  • 2 Tablespoons flour

  • ¼ Cup sugar

  • ½ Teaspoon cinnamon

  • 4 Teaspoons butter

Preheat oven to 350F degrees.


Paper line or grease muffin pan.


In a large bowl combine the sugar, flour, cinnamon, ginger, soda, salt, cloves and nutmeg.


In another bowl combine the eggs, pumpkin and oil; add to the dry ingredients mixing only until moistened.


Stir in the apples and spoon batter into the prepared muffin pan ¾ full.


Sprinkle with streusel topping.


Bake for 35 to 40 minutes or until pick comes out clean.


Topping:


Combine the flour, sugar and cinnamon.


Cut in the butter until crumbly
