Beef and Broccoli Recipe; Ground Beef Casserole Recipe & Beef and Broccoli Stir Fry Recipe



Delicious beef and broccoli recipe; we have come a long way since the old days of cooking broccoli. Back then broccoli was considered a health remedy; it had to be eaten for the nutritional benefits. Broccoli was boiled and a little salt and pepper was added so we could choke it down. Occasionally we might add a little of that unhealthy butter for flavor if we were lucky!


Ideally broccoli should be cooked to a tender crisp stage. In this state it retains a great appearance and flavor but also maximum vitamins and minerals. If you purchase locally grown broccoli, it will cook faster than if purchased from supermarkets which have been shipped in. Steaming is the best way to cook broccoli to retain flavor and vitamins. Place it in a basket or colander and set in a pot containing just enough boiling water to reach the bottom of basket. Cover pan with lid and steam for about 7 minutes. At this stage broccoli can be added to meats to make many delicious dishes like THE beef and broccoli recipe.

Some things are not so good about the “good old days”. Today broccoli is considered a delicacy in gourmet dining. Fabulous flavored sauces are poured over this green vegetable to appease the appetite. It is fixed in stir fries, sautéed with delicious spices or made into great recipes like a beef and broccoli recipe.




MARINATED FLANK STEAK RECIPE


This beef and broccoli recipe is made from a marinated flank steak recipe. It is deliciously flavored with soy sauce, garlic and ginger giving an Asian appeal.


Steak Marinade


  • 1 Tablespoon water

  • 1 Tablespoon red wine

  • 1 ½ Tablespoons soy sauce

  • ½ Teaspoon garlic powder

  • ½ Teaspoon sugar

  • ¾ Pound flank steak cut in strips

Combine and mix water, wine, soy sauce, garlic powder and sugar; marinate steak for 15 minutes.


  • 1 Tablespoon cooking oil

  • 1 Teaspoon grated gingerroot

  • 1 Chopped green onion

  • 1 Clove minced garlic

  • 1 Bunch broccoli, cleaned and broken into small pieces

  • ½ Teaspoon sugar

  • 1 ½ Teaspoon cornstarch

Heat oil until hot in wok or skillet; add ginger and green onion and cook until light brown.

Add steak and stir fry until meat turns brown; remove from skillet.

Add garlic and broccoli and stir fry quickly; add sugar and cornstarch and mix well.

To serve arrange broccoli on platter with flowers facing out and arrange meat in the center.

BEEF AND BROCCOLI STIR FRY RECIPE


As the title suggest, this beef and broccoli recipe is a beef and broccoli stir fry recipe utilizing many of the same ingredients that most stir fry recipes call for. The steak is great in this recipe and when served over rice it is a great filling meal.


  • 1 Pound steak

  • 3 Teaspoons paprika

  • 2 Cloves minced garlic

  • 1 Tablespoon plus ¼ Cup soy sauce divided

  • 2 Tablespoons butter

  • 1 ½ Cups beef broth

  • 1 Cup thinly sliced onions

  • 1 Thinly sliced green bell pepper

  • ½ Cup sliced celery

  • ½ Cup sliced fresh mushrooms

  • 1 Cup broccoli pieces

  • ¼ Cup water

  • 2 Tablespoons cornstarch

  • 1 Large fresh tomato in wedges

  • Cooked rice

Combine and blend in small bowl paprika, garlic and one tablespoon soy sauce.

Slice beef very thin and marinate soy sauce mixture for 45 minutes.

Brown meat in the butter in a large skillet; add broth and simmer for 30 minutes.

Lightly stir fry vegetables in a small amount of hot oil; add to beef.

Blend ¼ cup soy sauce, water and cornstarch; add to meat mixture and simmer until thick and clear.

Add tomato wedges and heat through; serve over cooked rice.




GROUND BEEF AND BROCCOLI STIR FRY RECIPE


This beef and broccoli recipe is a little more economical to make using ground beef instead of steak. This ground beef casserole is very filling and delicious served as a family dinner.


  • 1 Pound ground beef

  • 1 Package frozen broccoli pieces, cooked and drained

  • 1 Can tomato soup

  • ½ Can water

  • ½ Teaspoon salt

  • ¼ Teaspoon black pepper

  • 2 Cups mashed potatoes

  • 1 Can French fried onion rings

  • ½ Cup shredded Cheddar cheese

Preheat oven to 350F degrees.

Brown beef in skillet and drain.

Combine beef with broccoli, soup, water, salt and pepper.

Pour into a casserole baking dish.

Combine mashed potatoes with ½ can onion rings; spoon in an outer ring on top of casserole.

Bake uncovered for 25 minutes.

Top potatoes with grated cheese and remaining onions rings; bake 5 more minutes.




HOT POT RECIPE


This hot pot recipe is easy to make on the stove top; delicious especially in the colder weather.


  • ½ Pound diced bacon

  • 1 Pound ground lean beef

  • 1 Can (10 ½ ounces) condensed beef broth

  • 1 Quart water

  • 1 Chopped onion

  • 1 Chopped green pepper

  • 1 Sliced carrot

  • 1 Tablespoon soy sauce

  • 1 Can (16 ounces) diced tomatoes

  • 1 Package (10 ounces) frozen broccoli

  • 1 Sliced zucchini

  • 2 Teaspoons salt

  • ¼ Teaspoon black pepper

  • 1 Tablespoon chopped parsley

Fry bacon until crisp and drain on paper towels; pour off all but 2 tablespoons bacon fat.

Sauté ground beef in 2 tablespoons bacon fat; add broth, water, onion, green pepper, carrot, soy sauce and tomatoes and simmer gently for 1 hour.

Add broccoli and zucchini and simmer 10 minutes longer; season with salt and pepper.

Add parsley before serving.


LEFTOVER ROAST BEEF RECIPE


This beef and broccoli recipe utilizes leftover roast beef that you don’t know how to use; your family will not know it is a leftover.


  • 1 ½ Cup leftover roast beef cut into small pieces

  • 2 Packages (10 ounces) frozen broccoli

  • 1 Cup chopped celery

  • 1 Tablespoon butter

  • 1 Can (10 ½ ounces) cream of mushrooms soup

  • 1 Cup sour cream

  • Buttered bread crumbs

  • Grated Cheddar cheese

Preheat oven to 350F degrees.

Boil broccoli until tender; drain.

Cook celery in butter until tender; combine with broccoli.

Add soup and sour cream; pour into greased casserole baking dish and top with buttered bread crumbs and cheese.

Bake for 30 minutes.


BEEF AND NOODLES RECIPE


This beef and broccoli recipe is a “meal in one” served over noodles.


  • 1 ½ Pounds leftover roast beef

  • ½ Cup cooking oil

  • 2 Cups sliced onions

  • ½ Cup canned mushrooms with liquid

  • 1 ½ Teaspoon salt

  • ¼ Teaspoon black pepper

  • 1 Can (8 ounces) tomato paste

  • 1 Cup leftover or prepared beef gravy

  • Package frozen broccoli thawed

  • ½ Cup sour cream

  • 6 Cups hot cooked noodles

Sauté onions and mushrooms in hot oil; add mushroom liquid, salt, pepper, tomato sauce and gravy.

Cook mixture over low heat about 15 minutes.

Add cooked meat and thawed broccoli; cook about 15 minutes longer or until thoroughly heated.

Stir in sour cream and serve over noodles.
