Bran Recipes for Muffins like Apple and More

Bran recipes are considered to be healthier than those made solely of refined products. Bran is the hard outer layer of grain and is rich in dietary fiber. It also contains substantial vitamins, minerals, proteins and other beneficial nutrients for the body.

Bran, wheat or rice, is routinely used to enrich breads; particularly muffins. Bran recipes for muffins make a great breakfast food. They can be prepared ahead of time to keep on hand for this important meal. Not only do they make a convenient meal but also a healthy and filling food due to the high fiber.

This first recipe is for when you are cooking for a crowd, it make about 4 ½ dozens of regular size muffins. You can store in a covered container in the refrigerator for up to 6 weeks. You might want to divide it in half or one third.

Raisin Bran Cereal muffins

RAISIN BRAN CEREAL MUFFIN RECIPE(Also known as Six Weeks Bran Muffins)


  • 15 Ounce box Raisin Bran cereal
  • 5 Cups flour
  • 3 Cups sugar
  • 5 Teaspoons baking soda
  • 2 Teaspoons salt
  • 1 Quart buttermilk
  • 1 Cup vegetable oil
  • 4 Beaten eggs


Preheat oven to 400F degrees.

Use paper liners or lightly grease muffin pans.

Combine the cereal, flour. Baking soda and salt; mix well.

Add remaining ingredients and mix well.

Fill muffin pans 2/3 full and bake for 15 minutes.


APPLESAUCE RAISIN MUFFINS

  • 1 ½ Cups wheat flour
  • ½ Teaspoon salt
  • ¼ Cup honey
  • 2 ¼ Cups Millers bran (Unprocessed wheat bran)
  • 1 Egg
  • 1/3 Cup raisins
  • ½ Cup apple sauce
  • 1/3 Cup vegetable oil
  • 1 1/3 Cups low fat milk
  • 1/3 Cup brown sugar
  • 3 Teaspoons baking powder


Preheat oven to 400F degrees.

Use paper liners or grease muffin pan.

Mix the egg, milk, honey, oil and applesauce.

Stir in the dry ingredients.

Spoon batter into muffin cups 2/3 full.

Bake for 25 minutes or until pick comes out clean.


FRESH APPLE BRAN MUFFINS

  • 2 Cups Bran News cereal
  • ¾ Cup milk
  • 1 Beaten egg
  • ¾ Cup peeled finely chopped apple
  • ¼ Cup raisins
  • ¼ Cup honey
  • 2 Tablespoons vegetable oil
  • 1 ¼ Cups flour
  • 2 Teaspoons baking powder
  • ½ Teaspoon ground cinnamon


Preheat oven to 400F degrees.

Grease or paper line twelve 2 ½ inch muffin cups.

In medium bowl, combine cereal, milk, egg, apple, raisins, honey and oil; let set 10 minutes.

In a large bowl combine the flour, baking powder and cinnamon.

Add the cereal mixture to the flour mixture, stirring just to moisten; spoon into muffin cups.

Bake 15 to 17 minutes or until pick comes out clean.
