Butter, Margarine and Vegan Recipes

Read your latest margarine vs. butter. There just seems to be nothing like butter.
It always tasted so good, I had it on EVERYTHING.

Years ago, when margarine was touted, I always doubted it and for good reason.
It's just a bunch of chemicals and as bad as butter is for us, margarine is even
worse.

Now, being a vegan, I do not eat butter any more, fortunately and UNfortunately!

I have a recipe for a Mock Whipped cream frosting (made with butter) that is really a no-fail and
absolutely delicious. Creamy, just like whipped cream and sweet but not too sweet.

My cousin used to make a boiled frosting that everyone LOVED but she wouldn't
share the recipe. My other cousin, her sister, didn't even have it. I shared my (I call
it White Silk) frosting recipe with her and she said it was a huge flop.

I asked her exactly what she did and the problem was that she used margarine.

I thought that was quite interesting.

I have been using vegan butter - Earth Balance (not sure it's any more healthy than the actual butter)
but, it too, is only good for certain recipes. Does not make pie dough like the real butter does.

So, I am still experimenting with that. Just thought I'd share this with you.
