Combine Cake Recipes with Pineapple Desserts if Learning How to Bake a Cake


There are cake recipes for every occasion and if I can’t find the right one I make my own recipe. For easy dessert recipes add simple ingredients like nuts, coconut, raisins or other small pieces of dried fruits or bits of chocolate to basic cake recipes. You will be amazed at your own creations with a little imagination.


Another way to make cakes for different occasions is by using different types and shapes of cake baking pans. A loaf pan or bundt pan makes a simple cake for tea or coffee time; add a little glaze and you are set to entertain. Cupcakes are a great way (and easy) to entertain a child’s birthday party.


Delicious frosting recipes can transform a basic layer cake to an eloquent special occasion cake. By adding nuts, chocolate chips or butter brickle chips to the frosting changes the flavor completely of a plain white cake. By swirling a little food color in the frosting also dresses up a cake.



MONKEY CAKE RECIPE


  • 1 ½ Cups sifted flour
  • 1 Cup granulated sugar
  • 1 Pinch salt
  • 1/3 Cup oil
  • 1 Tablespoon vinegar
  • 1 Teaspoon vanilla
  • ¼ Teaspoon banana extract
  • 2 Ounces melted chocolate
  • 4 ½ Ounces strained banana baby food
  • 1 Teaspoon soda
  • ¼ Cup cold coffee
  • ½ Cup diced dates

Preheat oven to 350 degrees. Grease and dust with flour a 9x13 in cake pan.


In a large mixing bowl, sift together flour, sugar and salt.


Make a well in center and add remaining ingredients, (EXCEPT THE DATES) Mix well and pour into the prepared pan. Sprinkle dates on top. Bake for approximately 35 minutes or until tested done.


When cool, add crumb topping.


TOPPING


  • 3 Tablespoons melted butter
  • 1 Small package instant banana pudding mix
  • ½ Cup shredded coconut
  • ¼ Cup sunflower seeds

Mix topping until crumbly and sprinkle over cooled cake.



You can be pretty sure cake recipes which have sour cream in them will produce a very good cake. They following lemon pound cake recipe is a perfect example with a great combination of sour cream, butter and lots of eggs.

LEMON POUND CAKE RECIPE


  • 3 Cups sugar
  • 1 Cup butter
  • 6 Eggs
  • 1 Cup sour cream
  • 3 Cups self-rising flour
  • 1 Teaspoon vanilla
  • ½ Teaspoon lemon extract

Preheat oven to 350 degrees. Grease and dust with flour a tube cake pan.


Mix all ingredients well with electric mixer. Pour into prepared cake pan and bake for 1 hour or until tested done.



I have always loved baking with pineapple since I was a child and I baked pineapple cookies. The next two pineapple recipes are no exception! I love the moistness of the first pineapple cake; almost like a pudding cake. The second pineapple recipe combines the pineapple cake with a sweet potato cake recipe and topped with a sour cream cinnamon topping. How delicious! Try both of these pineapple cakes.



PINEAPPLE CAKE RECIPE


  • 1 ¾ Cups sifted flour
  • 1 Teaspoon baking soda
  • 1 ¾ Cups sugar
  • 2 eggs
  • 1 Large can crushed pineapple (with juice)

Preheat oven to 350 degrees. Grease and flour a 9x13 inch baking pan.


Mix flour, baking soda, sugar and eggs in a mixing bowl with electric mixer on medium speed. Add pineapple and continue mixing until blended.


Pour into prepared pan. Bake for 40 minutes or until tested done.


TOPPING FOR PINEAPPLE CAKE RECIPE


  • 3 Ounces cream cheese
  • 4 Tablespoons soft butter
  • 2 Cups confectionary sugar

Cream ingredients together and spread over warm cake.


PINEAPPLE PAN CAKE with sweet potatoes


  • ¼ Cup soft butter
  • 1 ¼ Cups flour
  • 1 Cup sugar
  • 1 Cup chopped walnuts
  • 2 Teaspoons cinnamon
  • 1 Teaspoon baking soda
  • Pinch salt
  • 1 Egg
  • ½ Cup sweet potatoes (strained baby food)
  • 8 ¾ Ounce canned crushed pineapple with juice
  • 1 Teaspoon vanilla
  • 1 Cup sour cream
  • Cinnamon/Sugar

Preheat oven to 325 degrees.


Combine all ingredients except the sour cream and cinnamon and sugar mixture in a 9x13 inch baking pan. Mix with a fork until well blended.


Bake in oven for 50 minutes. When cake is cool, top with sour cream. Sprinkle the sour cream with the cinnamon and sugar mixture. Refrigerate


The following two cake recipes are also among my favorites. The prune cake recipe as well as the apple stack cake recipe have been in my collection for most of my life. They are both moist, very flavorful and delicious. Years ago I use to use prune baby food for the prunes but now I can’t find them in the grocery so I cook the prunes. Both ways the cake is delicious.


PRUNE CAKE RECIPE


  • 1 Cup cooked prunes
  • 1 Cup vegetable oil
  • 2 Cups sifted flour
  • ½ Cup sugar
  • 1 Cup buttermilk
  • 3 Eggs
  • 1 Teaspoon baking soda
  • 1 Teaspoon cinnamon
  • Pinch salt
  • 1 Teaspoon nutmeg
  • 1 Teaspoon allspice
  • 1 Teaspoon vanilla

Preheat oven to 350 degrees. Grease and dust with flour a 9x13 inch baking pan.


Mix all ingredients together in a mixing bowl. Pour into prepared cake pan and bake for 30 minutes or until tested done.

Cool cake and poke holes in top with a fork. Pour following icing over cake.


ICING FOR PRUNE CAKE


  • ½ Cup butter
  • 1 Cup sugar
  • ½ Cup buttermilk
  • ½ Teaspoon baking soda
  • ½ teaspoon vanilla
  • 1 Teaspoon corn syrup

Combine all ingredients in a heavy saucepan. Heat and stir on medium temperature until butter melts and sugar dissolves. Pour over cool cake.


APPLE STACK CAKE


  • 2 Cups sugar
  • 2 Eggs
  • 1 Teaspoon Baking soda
  • 3 Teaspoons Baking powder
  • 6 Cups flour
  • Pinch salt
  • 1 Teaspoon vanilla
  • 1 Cup soft butter
  • 1 Teaspoon vanilla
  • ½ Cup buttermilk

Preheat oven to 350 degrees.


Cream sugar and butter. Add eggs, one at a time, beating well after each.


Sift flour and dry ingredients. Add to the creamed mixture, alternately with the buttermilk. Add vanilla.


Divide dough into 6 equal parts. Pat each part into a 9 inch greased pan. Bake about 12 minutes.


When all dough has been baked, add filling between layers and stack.


APPLE FILLING


  • 3 Pounds dried apples
  • 1 Cup brown sugar
  • ½ Cup white sugar
  • 2 Teaspoons cinnamon
  • ½ Teaspoon cloves
  • ½ Teaspoon allspice
  • Apple juice

Wash apples, cover with water in a heavy saucepan. Bring to a boil and reduce heat to simmer. Cook until tender. Mash thoroughly. Blend in spices and sugars. Set aside to cool.


Spread each cake layer with the apple filling, assembling one on top of the other. Do not put filling on top layer.


When cake has been assembled, wrap in paper towels soaked with apple juice. Then wrap cake and paper towels in a plastic wrap. Refrigerate for 7 days before serving.
