  • 1 Package instant pistachio pudding mix (3.4 Ounces)
  • 1 Cup semi sweet chocolate chips
  • 1 Cup chopped pistachio nuts
  • ½ Cup shredded coconut

Preheat oven to 375F degrees; grease and flour 9X13 inch baking pan.

Sift the flour, baking powder and salt together; set aside.

In large mixing bowl cream butter, sugar, eggs, milk and vanilla.

Add flour mixture; mix until blended (If too stiff for mixer stir in by hand).

Add pudding mix, chocolate chips, nuts and coconut; mix thoroughly by hand.

Spread mixture evenly into prepared pan; flour hands and press dough.

Bake about 25-30 minutes until firm and pick comes out clean.

Cut in small bars makes 48-56 bars.

  • ½ Pound brown sugar

  • ¾ Pound crunchy peanut butter
  • 2 Teaspoons baking soda
  • 4 ½ Cups old fashioned rolled oats
  • ¼ Pound chocolate chips
  • ¼ Pound M&M candies

Preheat oven to 350 degrees. Mix all ingredients together .THERE IS NO FLOUR IN THIS RECIPE. Drop by a teaspoon onto ungreased cookie sheets. Bake for approximately 10 minutes or until done. DO NOT OVERBAKE. Remove from oven and cool.


CHOCOLATE CHIPS BARS RECIPE (bars with mint)

  • 1 Cup Lorna Doone Shortbread cookies, crushed fine
  • ¼ Cup melted butter
  • 1 Cup flaked coconut
  • 1 Cup semi-sweet chocolate chips
  • 1 Cup chopped pecans
  • 4 Drops peppermint oil
  • 1 Can sweetened condensed milk

Preheat oven to 350 degrees.

Mix crumbs with melted butter, and press into bottom of 7x11 inch baking pan. Add a layer of the coconut, then a layer of the chocolate chips, then a layer of the pecans.

Add the peppermint oil to the condensed milk and mix well. Spoon milk evenly over dry mixture. Bake for 25 to 30 minutes, being careful not to overbake.

Remove to rack and cool.

ICING:

  • 2 Squares semi-sweet chocolate
  • 2 Tablespoons butter
  • 2 Drops peppermint oil

In double boiler, melt chocolate with butter. Add peppermint oil. Spread evenly baked bars. Refrigerate until set. Cut into bars with a sharp knife.

Preheat oven to 375 degrees. Lightly grease cookie sheets.

  • 1 ¾ Cups flour
  • 1 Teaspoon baking powder
  • ¾ Teaspoon baking soda
  • 1 Teaspoon salt
  • ½ Cup rolled oats
  • 6 Ounces semi sweet chocolate chips
  • ¼ Cup honey roasted peanuts
  • 4 Mini chocolate covered caramel candy bars chopped (2 ounces)

Preheat oven to 350F degrees.

Beat shortening and sugar together until creamy; beat in milk, vanilla and egg.

Sift together flour, baking powder, soda, salt and cinnamon.

Add dry ingredients to creamed mixture a little at a time mixing well after each addition.

Stir in chocolate chips, oats, peanuts and candy; drop by teaspoonfuls onto baking sheets.

NOTE: I line my baking sheets with parchment paper for most of my cookies.

Bake 12 to 15 minutes or until golden brown.

  • 1/3 Cup Shortening
  • 1 Cup sugar
  • ½ Cup brown sugar
  • 2 Beaten eggs
  • 2 Teaspoons vanilla
  • 2 Cups flour
  • 1 Teaspoon salt
  • 1 Teaspoon baking soda
  • 1 Package (12 ounces) semi sweet chocolate chips
  • 1 Cup raisins
  • ½ Cup coconut

Preheat oven to 350F degrees.

Cream butter, shortening, sugars, eggs and vanilla until light and fluffy.

Sift together flour, soda and salt; add to creamed mixture and blend well.

Add chocolate chips, raisins and coconut; mix until well blended.

Drop by teaspoon full onto baking sheets; bake 10 to 12 minutes until set.

Makes 45 to 48 cookies.
