Large family small kitchen

by Mike
(Byrdstown, TN, USA)

Living full time in a weekend cabin lake home has space challenges. Trying to fix breakfast for holiday guests so everyone can eat at once takes planning or the "Zip-lock" omelet.

We simply prepare diced ham, green peppers, onions, and shredded cheese the prior night. In the morning we create a 3 dozen egg batter. When it is time for breakfast we give each guest a freezer quart baggie to write their name upon and place their choice of omelet extras in the bag.

Once everyone has completed their choice, we add a ladle of egg batter to each bag. Then we roll the air out and place all bags in a large pot of boiling water. When the bag floats, it is done.

Now we all eat together.
