Lentil Soup Recipe; Vegetable Soup Recipe or Sausage and Lentils

This lentil soup recipe is a hearty soup recipe that is especially good in the winter. Lentils are very high in fiber and are considered by many a necessary part of the diet for health. Lentils make delicious hearty soup recipes with vegetables added and some form of pork like lentils and sausage.



LENTIL SOUP


  • 1 Cup lentils

  • 8 Cups water

  • 2 Medium peeled and diced potatoes

  • 3 Diced carrots

  • 1 Large finely chopped onion

  • 1 Stalk diced celery

  • 1 Pound smoked sausage (remove skin and slice)

  • Salt/pepper to taste

  • 2 Tablespoons butter

  • 2 Tablespoons flour

Soak lentils in the water overnight. Bring lentils just to a boil, reduce heat and cook until tender, adding more water if necessary. Add the potatoes, carrots, onion and celery. Cook about 15 to 20 minutes or until vegetables are tender. Add salt and pepper to taste. In a small pan, melt the butter and add the flour to make a roux, Stir the roux into the hot soup to thicken. Add the sliced sausage and stir until hot. Serve immediately.




LENTIL SOUP RECIPE with smoked sausage


  • 1 Cup lentils

  • 8 Cups water

  • 1 Potato peeled and diced

  • 3 Carrots diced

  • 1 Medium diced onion

  • ½ Cup chopped celery

  • 1 Pound smoked sausage

  • 1 Teaspoon salt

  • 2 Tablespoons flour

  • 2 Tablespoons butter


Soak lentils overnight; cook over medium heat until tender adding more water if necessary.


Add all ingredients except for flour and butter.


Cook about 20 to 30 minutes.


Melt butter and add flour making a roux; add to soup and stir to thicken.


Remove skin from sausage, slice and add to soup; cook until sausage is hot and serve.




LENTIL SOUP RECIPE with vegetables


  • 1 ½ Cup lentils

  • 5 Cups lentils water

  • 4 Slices bacon

  • 1 Medium diced onions

  • 2 Medium diced carrots

  • 1 Medium chopped green pepper

  • 1 Medium coarsely chopped tomatoes

  • 3 Tablespoons butter

  • 3 Tablespoon flour

  • 1 Can (10 ½ ounces) beef broth

  • 2 Teaspoon salt

  • 2 Tablespoons vinegar


Wash lentils, cover with water and cook for 1 hour.


Cut bacon into small pieces and fry until crisp; add bacon to lentils.


Place vegetables in bacon fat and cook until limp; add to lentils.


In the skillet used for bacon, melt butter; add flour stirring to make a smooth paste.


Add beef broth, salt and vinegar to flour mixture stirring until smooth; add to lentils and stir to blend.


Cook over low heat for 30 minutes.
