There are many delicious party sandwich recipes but for perfection it is necessary to learn the technique of how to make sandwiches. The method to which you put them together will influence the taste and the presentation.
Make the filling two days ahead of the event. The exception for me is egg salad; I like the fresh taste of egg salad. Store the fillings in an air tight container in the refrigerator. This time will allow for the flavor to blend. Buy the bread a day ahead; it is easier to work with when it is a day old. I also like the bread sliced thinner than normal for party sandwich recipes. There is nothing worse than getting a sandwich with all bread and no filling. We want a nice presentation for a party so we don’t want the filling falling out of these small sandwiches. The thinner slices bread slices allows for good flavor and a pretty presentation.
Before the party time, lay 4 slices of bread on a cutting board. With a sharp bread knife cut off the crust on all four sides of the slices and squaring off the slices. (Save trimmings and freeze for croutons, bread crumbs or stuffing.) Spread each slice with a thin layer of soft butter to keep the bread from absorbing the moisture from the filling. Spread one slice of bread with the filling and then top with another slice of bread. With the sharp bread knife cut the sandwiches in quarters (either squares or triangles) or cut in strips diagonally. If you don’t mind waste, you can cut the bread with cutters, either round or in shapes. Continue making sandwiches with the same process.
A flat plastic food storage container with a tight lid is good to store your party sandwiches in. Layer them between sheets of wax paper. When all the sandwiches are finished, cover the top with a couple layers of plastic wrap. then cover with the lid. Store in the refrigerator until ready to serve.
CHIPPED BEEF RECIPE
- 8 Ounces cream cheese
- 3 Teaspoons cream
- 3 ½ ounces dried beef
- 3 Teaspoons prepared horseradish
Chop the dried beef very fine. Thin the cream cheese with the cream. Combine the beef and cheese with the horseradish and blend well.
PIMENTO CHEESE SPREAD
- 8 Ounces cream cheese
- 8 Ounces shredded sharp cheddar cheese
- 3 Cans pimentos, chopped into small pieces
- 1 Teaspoon cream
- 1 Teaspoon sweet pickle juice
Combine the cheeses with the cream and pickle juice; mix well. Add the pimentos and mix until well blended.
