One of my favorite summer appetizers is my egg salad mini bagel. It is topped with fresh summer vegetables and so refreshing. Simply toast mini bagels. Whip boiled eggs with a little mayo and spread on bagels. Top egg mixture with grated carrots, zucchini, and sprouts. These can be finished ahead of time or you can have ingredients ready and but together minutes before serving. This is listed under Egg Recipes.
