Cooking with Apples

Hello Friends,


“An apple a day keeps the doctor away” is a sound practice many of us like to enjoy. Apples lend themselves to many different types of snacks or recipes. They may be combined with other fruits to make salads, and they could be sliced and served with cheese. Apples are often fried, stewed, sautéed and baked. Apples are great flavor enhancers when added to sauces or they are wonderful in plain apple sauce. Everyone loves freshly baked apple pie, and I love caramel and cinnamon candy apples. This is the best fruit used to compliment pork dishes. I use chopped apples in my stuffing which I stuff pork chops, and it is very tasty. Many garnishes are made with apples from a simple slice to an elaborate bird shaped from one. Some varieties of apples are suitable for eating, others for cooking and still others can be for eating and cooking. Don’t let these categories stop you from trying the eating for cooking or cooking for eating. I have tried cooking some that were specifically listed for eating and thought the recipe turned out very good.

Most apples are sold by the pound although sometimes fancy eating apples are sold by the piece. During the fall of the year, apple harvest time, pecks and bushel baskets are sold at produce stands and along many highways. This is the best time to purchase them and the price is usually much cheaper. Harvest time is a great time to can apples for the rest of the year. If you have a cool dry place to store them, they will keep and retain their flavor until about February. If kept in storage longer than that, they should be cooked with spices, lemon juice and brown sugar, which tends to simulate the flavor of fresh apples. Apples wrapped individually will keep best.
