CHICKEN WITH CRANBERRY BARBEQUE SAUCE RECIPE

  • 1 Chicken (about 3 pounds) cut up and skinned
  • ¼ Cup vegetable oil
  • ¼ Teaspoon salt
  • ¼ Teaspoon black pepper
  • ½ Cup chopped onion
  • ¼ Cup chopped celery
  • 1 Cup whole berry cranberry sauce
  • ½ Cup ketchup
  • 1 Tablespoon brown sugar
  • 2 Tablespoons lemon juice
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon prepared mustard
  • 1 Tablespoon red wine vinegar

Brown chicken pieces in skillet with hot oil on all sides; drain on paper towels and discard oil.

Arrange chicken pieces in lightly greased casserole baking dish; sprinkle with salt and pepper.

Cook onion and celery in skillet over medium heat until tender; stir often.

Stir in cranberry sauce, ketchup, brown sugar, lemon juice, Worcestershire, mustard and vinegar.

Bring mixture to a boil; remove from heat and spoon over chicken.

Bake for 1 hour at 325F degrees for 1 hour or until thoroughly done; baste with pan drippings often.


HERB BAKED BARBEQUE CHICKEN RECIPE

Wonderful herbs can be added to most any sauces to make delicious baked barbeque chicken recipes.

  • 1 Chicken (about 3 pounds) cut in quarters
  • ¾ Cup vegetable oil
  • ¼ Cup white vinegar
  • 2 Tablespoons lemon juice
  • 2 Tablespoons grated onion
  • 1 Clove minced garlic
  • 2 Teaspoons salt
  • ½ Teaspoon black pepper
  • ¼ Teaspoon dried rosemary
  • ¼ Teaspoon dried thyme
  • ¼ Teaspoon dried sweet basil

Preheat oven to 375F degrees.

Place chicken quarters in a large shallow pan.

Combine remaining ingredients and pour over the chicken.

Let chicken stand 1 to 2 hours turning once or twice.

Bake for 1 hour or until thoroughly done basting frequently.

NOTE: This can also be cooked on the grill.


BARBECUE CHICKEN THIGHS RECIPE

  • 3 to 4 Pounds chicken thighs
  • ½ Cup diced celery
  • ¾ Cup chopped onion
  • ¾ Cup vegetable shortening
  • ½ Cup catsup
  • 1 Teaspoon salt
  • 1/8 Teaspoon red pepper
  • 1 Cup Coca Cola
  • 2 Teaspoons lemon juice
  • 1 ½ Tablespoons prepared mustard

Place chicken thighs in a greased shallow pan.

Brown onions and celery in hot shortening; add remaining ingredients and simmer for 15 minutes.

Pour ¼ of sauce over chicken thighs and bake at 350F degrees for 1 ½ hours or until thoroughly done.

Baste chicken every 20 to 25 minutes each time using ¼ of sauce; turn thighs over after 45 minutes.


BAKED CHICKEN BREAST RECIPE

This baked barbeque chicken recipe that uses just the breast is very easy.

  • 3 Pounds (approximately) chicken breasts
  • 1/3 Cup flour
  • 2 Teaspoons salt
  • 1/3 Cup cooking oil
  • ½ Cup finely diced onion
  • ½ Cup finely diced celery
  • ½ Cup finely chopped green bell pepper
  • 1 Cup ketchup
  • 1 Cup Coca Cola
  • 2 Tablespoons Worcestershire sauce
  • 1 Tablespoon salt
  • ½ Teaspoon hickory smoked salt
  • ½ Teaspoon basil leaves
  • ½ Teaspoon chili powder
  • 1/8 Teaspoon black pepper

Rinse chicken pieces and pat dry; mix flour and 2 teaspoons salt and coat the chicken.

Heat oil in skillet and brown the breasts on all sides.

Place pieces in casserole baking dish and discard drippings.

Combine remaining ingredients and blend well; spoon over chicken covering well.

Cover and bake at 350F degrees for about 1 ¼ hours or until thoroughly done.


HOW TO MAKE BAKED BBQ CHICKEN RECIPE

  • 1 Chicken cut in pieces
  • ¼ Cup water
  • ¼ Cup vinegar
  • 3 Tablespoons vegetable oil
  • ½ Cup ketchup
  • 3 Tablespoons Worcestershire sauce
  • 1 Tablespoon dry mustard
  • 1 ½ Teaspoons salt
  • 2 Tablespoons onion
  • ¼ Teaspoon black pepper

Arrange chicken pieces in greased baking dish.

Combine sauce mixture and pour over pieces.

Bake at 350F degrees for 1 hour or until thoroughly done.


BAKED CHICKEN WINGS RECIPE

Great appetizers like these baked chicken wings come out of baked barbeque chicken recipes.

  • 18 chicken wings (about 3 pounds) cut in sections
  • 2 Tablespoons salad oil
  • 3 Green onions cut into 3 inch pieces
  • ½ Cup soy sauce
  • 1/3 Cup dry sherry
  • ¼ Cup ketchup
  • 2 Tablespoons sugar
  • ¼ Teaspoon ground ginger

In Dutch oven over high heat cook wings in hot oil until brown.

Combine soy sauce, dry sherry, ketchup, sugar and ginger; blend well and spread oven wings.

Cover and place in preheated oven at 350F degrees for about 40 minutes or until wings are thoroughly cooked.

Garnish with remaining green onions.
