Margarita ChickenMargarita Chicken
  • 6 Boneless skinless chicken breasts halves
  • ¼ Cup lime juice
  • 2 Tablespoons cooking oil
  • 2 Tablespoons tequila
  • ½ Teaspoon salt
  • ½ Teaspoon ground cumin
  • ½ Teaspoon cayenne pepper
  • 2 Cloves finely chopped garlic

Combine all ingredients except chicken; stir to blend.
Add chicken breasts turning to coat; cover and refrigerate 2 to 24 hours turning occasionally.
Remove chicken from marinade and discard marinade.
Grill or broil chicken 4 to 6 inches from medium heat source for about 15 to 20 minutes.
Turn occasionally until juice is no longer pink and when center of thickest part is done.
Serve with peach or fruit salsa.
