Cheese Breakfast Recipes 

You cannot go wrong when serving cheese breakfast recipes, either for special breakfasts or for brunches. I know that most of us want to grab something quick for breakfast on a normal day and out the door we go. However, on the weekend, a holiday or for a special brunch try serving something with cheese added like a cheese coffee cake recipe, cheese blintz recipe or learn how to cook grits with cheese to make Southern grits.


Breakfast, our first meal of the day, is a means for breaking the fast from overnight sleeping. For years a lot of research has been given to this one meal of the day. Many believe that it is the most important meal of the day. It regulates your body, helps prevents you from overeating throughout the day and gives your body the energy to get you through the day. Much research has shown (even my brother’s) that a little protein should be added any time you eat carbohydrates. If you are one that only likes a small breakfast like a muffin or biscuit, cheese added to these will provide a little protein.

  • ½ Cup softened butter
  • 1 ¼ Cups sugar
  • 2 Large eggs
  • 2 Cups flour
  • 1 Teaspoon baking powder
  • 1 Teaspoon salt
  • ¾ Cup milk
  • ¼ Cup water
  • 2 Cups fresh blueberries
  • 8 Ounces cream cheese, softened and cut in cubes
  • ½ Cup flour
  • ½ Cup sugar
  • 2 Tablespoons grated lemon rind
  • 2 Tablespoons softened butter

Preheat oven to 375F degrees.

In mixer bowl beat ½ cup of butter and 1 ¼ cups of sugar until fluffy; add eggs beating after each.

Combine flour, baking powder and salt and stir to blend.

Using low speed of mixer, add flour mixture to creamed alternating with milk and blend until smooth.

Gently fold in blueberries and cream cheese.

Pour batter into a 9 inch square greased pan or springform pan.

Combine ½ cup flour, ½ cup sugar, lemon rind and 2 tablespoons softened butter; blend with a fork.

Sprinkle mixture over batter; bake 50 to 55 minutes. GOOD WHEN WARM!

BLINTZ CHEESE BREAKFAST RECIPE

This is from the easy cheese breakfast recipes for a casserole that is great for breakfast or lunch. Make it the day before if you will be running short on time.

Filling

  • 2 Cups small curd cottage cheese
  • 2 Egg yolks
  • 1 Tablespoon sugar
  • 8 Ounces cream cheese

Batter

  • 1 ½ Cups sour cream
  • ½ Cup orange juice
  • 6 Eggs
  • ¼ Cup softened butter
  • 1 Cup flour
  • 1/3 Cup sugar
  • 2 Tablespoons baking powder
  • 1 Teaspoon cinnamon

Preheat oven to 350F degrees.

Combine and beat filling; cottage cheese, egg yolks, 1 tablespoon sugar and cream cheese and set aside.

Combine and mix batter; sour cream, orange juice, 6 eggs, butter, flour, 1/3 cup sugar, baking powder and cinnamon.

Pour half of batter into a greased casserole dish.

Spoon filling over the batter; spread out with back of spoon.

Pour remaining batter over top of the filling.

Cover and refrigerate for at least 2 hours. (Can refrigerate overnight)

Bake for 50 to 60 minutes; serve with a little cherry or strawberry pie filling.


Sometimes cooks take cheese breakfast recipes for granted assuming no one would ever ask for them; for instance how to make scrambled eggs with cheese. There are different ways of making them. Sometimes we just beat eggs and add cheese; other times we might add some milk or butter.

  • 1 Cup milk
  • 1 Teaspoon salt
  • ¼ Teaspoon black pepper
  • Cayenne pepper OPTIONAL
  • 6 Slightly beaten eggs
  • 1 Cup grated cheese

Combine and mix melted eggs, butter, milk, salt, pepper and cayenne pepper.

Pour egg mixture in a butter greased large skillet; stir occasionally while cooking to scramble.

When eggs are almost done, sprinkle the grated cheese over the top; cook 2 more minutes to melt the cheese.

CHEESE GRITS RECIPE

When I grew up and lived up North I never liked grits; I thought they were so bland tasting. That was before I got hooked on Southern grits. They are so delicious and certainly not bland! The following cheese grits recipe is a sample, but try adding other of your favorite seasonings like basil, ginger, oregano, chives or even Worcestershire sauce. Experiment with different types of cheese in your recipe. You will find that grits adapt to many different flavors to make great cheese breakfast recipes.

  • 2 Cups grits, cooked according to package directions
  • ¼ Pound butter cut in small pieces
  • 1 Pound sharp Cheddar cheese
  • 4 Beaten eggs
  • 1 Cup milk
  • ½ Teaspoon garlic salt
  • ¼ Teaspoon black pepper
  • 4 Slices bacon fried crisp and crumbled

Preheat oven to 350F degrees.

Combine and blend hot cooked grits, butter, cheese, eggs, milk, garlic salt and black pepper.

Spoon mixture into a buttered casserole dish or pan; Spread crumbled bacon over top of casserole.

Bake 25 minutes.
