APPLESAUCE CHEESECAKE BARS

  • 3 Packages (8 ounces each) soft cream cheese
  • 1 Cup sugar
  • 2 Tablespoons flour
  • 3 Eggs
  • 1 Cup applesauce
  • ½ Teaspoon cinnamon
  • ¼ Teaspoon nutmeg
  • 2 Unbaked graham cracker crumb pie shells

Preheat oven to 350F degrees.

Combine the cream cheese, flour and sugar; beat until well blended.

Add eggs one at a time, beating after each.

Add the applesauce, cinnamon and nutmeg and blend well.

Pour evenly into the 2 unbaked pie shells and bake 50 to 60 minutes or until set.


HOW TO MAKE CHEESECAKE BARS

The sour cream in these cheesecake bars makes them very popular.

  • 1 Cup flour
  • 1/3 Cup firmly packed brown sugar
  • ¼ Teaspoon salt
  • 1/3 Cup butter
  • 1 Cup finely chopped pecans
  • 2 Packages (8 ounces each) soft cream cheese
  • ¾ Cup sugar
  • Grated peel of 1 lemon or 1 teaspoon lemon juice
  • 3 Eggs
  • 1 ½ Cups sour cream
  • 3 Tablespoons sugar
  • 1 Teaspoon vanilla

Preheat oven to 350F degrees.

Combine the flour, brown sugar and salt.

With a pastry cutter, cut in the butter until crumbly.

Stir in the nuts and press evenly into a 9 x 13 inch baking dish; bake for 15 minutes.

Beat together the cream cheese, ¾ cup sugar and lemon until smooth.

Add eggs one at a time beating well after each addition.

Pour cheese mixture over the crust and bake for 25 minutes; cool for 5 minutes.

Combine the sour cream, 3 tablespoons sugar and vanilla and mix well.

Spread sour cream mixture evenly over the top and bake about 7 minutes.

Refrigerate until cool and cut into bars.


GOOEY BARS RECIPE

These cheesecake bars are quick and easy cake mix bars.

  • 1 Box yellow cake mix (18 ½ ounce box)
  • ½ Cup melted butter
  • 1 Egg
  • 1 Pound powdered sugar
  • 8 Ounces softened cream cheese
  • 2 Eggs

Combine cake mix, melted butter and 1 egg; press into bottom 9 X 13 inch baking pan.

Mix sugar, cream cheese and 2 eggs; beat for 5 minutes.

Pour cheese mixture over cake mixture; bake in preheated oven at 325F degrees for 35 to 40 minutes.

Remove from oven and dust with additional powdered sugar.

Let set until cold before cutting.


CHEESECAKE BROWNIE RECIPE (or) ROCKY ROAD BARS

Nothing says cheesecake bars like these ooey gooey rocky road bars. Just imagine cream cheese, marshmallows and rich chocolate in this cheesecake brownie recipe!

Layer 1:

  • ½ Cup softened butter
  • 1 Cup sugar
  • 1 Ounce unsweetened melted chocolate
  • 2 Large eggs
  • 1 Cup flour
  • 1 Teaspoon baking powder
  • 1 Teaspoon vanilla extract
  • 1 Cup chopped pecans

Beat butter until creamy; gradually add sugar beating until light and fluffy.

Add melted chocolate; add eggs one at a time beating after each.

Combine flour and baking powder; add flour mixture to cream mixture.

Stir in vanilla and 1 cup pecans; spread mixture in bottom of 9 X 13 inch baking pan and set aside.

Layer 2:

  • 6 Ounces softened cream cheese
  • ¼ Cup softened butter
  • ½ Cup sugar
  • 1 Large beaten egg
  • 2 Tablespoons flour
  • ½ Teaspoon vanilla extract
  • ¼ Cup chopped pecans

Combine cream cheese and butter; beat until smooth.

Gradually add sugar beating until creamy; add egg, flour and vanilla and beat well.

Stir in chopped pecans; spread mixture over layer 1.

Sprinkle chocolate chips evenly over cream cheese layer.

Bake in preheated oven at 350F degrees for 35 minutes; remove from oven.

Sprinkle evenly with marshmallows and return to oven for 2 minutes longer.

Remove from oven and set aside.

Layer 3:

  • 1 Cup semi sweet chocolate chips
  • 2 Cups miniature marshmallows
  • 1 Ounce4 unsweetened chocolate
  • 2 Ounces cream cheese
  • ¼ Cup milk
  • ¼ Cup butter
  • 1 Pound powdered sugar sifted
  • ¼ Teaspoon vanilla extract

Combine unsweetened chocolate, milk, butter and cream cheese in top of double boiler over boiling water.

Reduce heat to low and cook until ingredients melt stirring occasionally.

Remove from heat; stir in powdered sugar and vanilla.

Pour chocolate mixture over the marshmallows in pan; swirl together with a spatula.

Set to cool completely; cover and chill thoroughly.

Cut into bars to serve.


CHEESECAKE COOKIE RECIPE

  • 1/3 Cup melted butter
  • ½ Cup brown sugar
  • ½ Cup chopped walnuts
  • 1 Cup flour
  • 8 Ounces cream cheese
  • ½ Cup granulated sugar
  • 2 Tablespoons milk
  • 1 Egg
  • ½ Teaspoon vanilla extract
  • 1 Tablespoon lemon juice

Combine and mix melted butter, brown sugar, walnuts and flour.

Reserve ¾ cup of mixture; press remaining mixture in 8 X 8 inch square pan.

Bake in preheated oven at 350F degrees for 12 minutes.

Combine and beat cream cheese, granulated sugar, milk, egg, vanilla and lemon juice; pour over baked crust.

Sprinkle top with reserved topping mixture; bake 20 to 25 minutes; remove from oven and cool slightly.

Cut into bars while still warm and remove from pan; cool on rack.


ZEBRA BROWNIES

Filling

  • 2 Packages (3 ounces each) 
  • ¼ Cup sugar
  • ½ Teaspoon vanilla
  • 1 Egg

Brownies

  • 1 Package Fudges brownie mix (21 ½ ounces)
  • 1/3 cup water
  • 1/3 cup vegetable oil
  • 1 Egg

Preheat oven to 350F degrees; grease bottom of 9X13 inch baking pan.

Combine all filling ingredients in a small bowl; beat until smooth and set aside.

In a large bowl combine all brownie ingredients; beat with a spoon until mixed.

Spread half of brownie mixture in bottom of prepared pan.

Pour filling over the top spreading to cover brownie mixture.

Top with spoonfuls of remaining brownie mixture.

To marble lightly pull a knife through the batter in wide curves.

Bake for 30 to 35 minutes until set; (Do not over bake).

Cool completely; refrigerate at least 1 hour and cut into bars.

Store in refrigerator; makes 36 bars.


SPLIT LEVEL CHEESECAKE BARS

Cheese Filling

  • 5 Ounces semi sweet chocolate (Break in pieces)
  • 1 Package (3 ounces) cream cheese
  • 1/3 Cup light cream
  • ½ cup chopped walnuts
  • 2 Tablespoons sesame seeds
  • ¼ Teaspoon almond extract

Crumb Mixture

  • 1 ½ cup flour
  • ½ Teaspoon baking powder
  • ¼ Teaspoon salt
  • ¼ cup sugar
  • ½ cup softened butter
  • 1 Egg
  • ¼ Teaspoon almond extract

Preheat oven to 375F degrees; lightly grease 11X7 inch pan.

TO MAKE CHEESE FILLING combine chocolate, cheese and cream in a saucepan.

Melt chocolate mixture over low stirring constantly.

Remove from the heat; stir in the walnuts, seeds and extract.

Blend mixture well and set aside.

TO MAKE CRUMB MIXTURE combine ingredients in large bowl.

Blend mixture until crumbly; press half of mixture in bottom of prepared pan.

Spread cheese mixture over the top; sprinkle remaining crumb mixture over the top.

Bake 20 to 25 minutes; cool and cut into bars.

Makes 24 bars.
