The making of homemade ice cream recipes is not a difficult process. The principal reason failure is carelessness in the measuring of ingredients. Always use good quality ingredients like the creams, eggs and fresh fruit.


There are two kinds of homemade ice cream recipes; French and American. French ice cream is made from cream, milk, eggs and sugar and it is heated or cooked. The American version is uncooked and has no eggs in its preparation.


You can prepare ice cream in your refrigerator freezer, therefore not needing to purchase an ice cream freezer. Set the freezer on very cold for quicker freezing. After preparing the ice cream mixture, pour it into a freezer tray and place tray on a shelf in the freezer. Freeze until firm.


Remove the frozen mixture from the tray and break up with a wooden spoon. Beat with an electric mixture until the mass is free from hard lumps but still crumbly. Do not beat too long. At this point, if the recipe calls for whipped cream, fold it in. Return mixture immediately to the freezer tray and place back in the freezer to finish freezing.

  • 2/3 Cup sugar
  • 1 Tablespoon cornstarch
  • 1 ½ Cups milk, whole or cream
  • 2 Eggs, separated
  • 1/8 Teaspoon salt
  • 1 Teaspoon vanilla
  • 1 Cup whipping cream
  • 2 Squares unsweetened chocolate, broken into pieces

Combine the sugar and cornstarch in the top of a double boiler. Gradually stir in the milk or cream. Place over boiling water. When mixture is hot add the broken chocolate pieces and blend until chocolate is mixed in. Continue cooking, stirring constantly until the mixture has thickened. Cover and cook for 10 minutes, stirring occasionally.

Stir a little of the hot mixture into the beaten egg yolks; then stir it into the remaining hot mixture. Cook over hot (not boiling) water, stirring constantly for 3 minutes. Remove from heat and cool.

Beat the egg whites until stiff adding salt and vanilla. Fold into the cooled custard.

Pour into the freezer tray and return to freeze until firm.

STRAWBERRY ICE CREAM

  • 3 Cups cream
  • 1 Cup powder sugar
  • 2 Cups chopped strawberries, peaches or other fruit

CHOCOLATE MEXICAN ICE CREAM

  • 2 Cups scalded cream
  • 2 Ounces melted unsweetened chocolate
  • 1 Teaspoon cinnamon

  • 2 Tablespoons flour
  • 2 Tablespoons cold water
  • ¾ Cup sugar
  • 2 Beaten egg yolks
  • ¼ Teaspoon salt
  • 1 Teaspoon vanilla
  • 1 Cup whipping cream

Add melted chocolate to the hot milk in a heavy saucepan, stirring constantly. Add the salt, cinnamon and ginger. Mix the flour and water together to a smooth paste and add to the hot cream mixture. Stirring constantly cook over low heat until mixture thickens to coat spoon.

Mix the sugar and eggs together. Beat some of the hot mixture into the egg mixture and then combine with the remaining cream mixture. Stirring constantly, cook 2 more minutes. Chill thoroughly. Beat with a mixer until smooth. Add the vanilla.

Beat the whipping cream to pudding consistency and blend into the chocolate mixture. Freeze in ice cream freezer until firm.
