How to Make Cheese Sandwich Recipes

Who was the first to learn how to make cheese sandwich recipes?  The answer to this question depends on who you ask. Although we never ate many sandwiches when I was growing up from the late forties to the early sixties, we usually had some type of cheese and bread. It would be common in our home to grab a piece of cheese along with a piece of bread to eat together if we were hungry. Would that be a sandwich? The word “sandwich” was not common in our vocabulary.

I really do not remember anyone eating too many sandwiches. No one ever said they wanted to learn how to make cheese sandwich recipes. I remember when I was about eleven years old occasionally our neighbors would have hamburgers or hot dogs (no cheese) on buns. During those summers when we had family cook outs we might have hamburgers without cheese on buns. We never called these sandwiches simply something on a bun. I guess these were my first memories of eating sandwiches.

Most people when I was young never snacked but ate regular scheduled meals. Even through my younger life as a wife and mother we never focused on how to make sandwiches. We tried to find other recipes using cheap meats which extended the servings which would not include sandwiches. A piece of cheese would be something Mom usually kept for a quick snack if we were really hungry between meals. She purchased Longhorn cheese, cut off a chunk and kept it at room temperature like butter. It was really satisfying when hungry.

I remember when I was about twelve or thirteen years old, Sister Shirley took me to a small restaurant for the first time. She said we would get a sandwich but I barely knew about what she was talking. She said the grilled cheese with ham was really good so she ordered one for me. I loved it! After that I wanted to learn how to make cheese sandwich recipes. I loved the warm melted cheese with the ham. Soon I was making this sandwich at home.

After I learned how to make cheese sandwiches for the first time, my world was opened. I knew then that I could add this warm cheese to many other ingredients to make sandwiches. I do not have to tell any of you about all the creations since my early days. So many have learned how to make cheese sandwiches with so many other ingredients and placed on such a variety of breads. Commercially, my first memories start with Frisch’s Big Boy and Buddy Boy sandwiches. I loved both of these with the delicious melted cheese.

My daughter just reminded me how I would make sandwiches with cheese and mustard for her. When I picked her up at noon from kindergarten sometimes we drove to Grandma’s and Grandpa’s house. Since I learned how to make cheese sandwich recipes, I like the cold ones but my favorites are always the hot ones. The hot ones can be grilled, placed under the broiler, baked or pressed.  Also when you place really hot meats and other ingredients on the breads, the cheese melts pretty quickly. All of these methods make great hot cheese sandwiches. Besides the great taste the hot melted cheese acts as a binder holding it all together with the bread.

When learning how to make cheese sandwich recipes keep your mind open to the wide range of cheeses to be used. I have found the most common in this country to be American, Swiss and mozzarella. This is because of availability and they are easy to melt. Some like Cheddar, Parmesan and others are harder so do not melt as easily. This problem is solved by grating the cheese first making it easier to melt.

  • ½ Cup softened butter (Divided)
  • 1 Small onion (Peel and slice)
  • 2 Large fresh mushrooms (Sliced)
  • ¼ Cup dry white wine
  • ¼ Cup chicken broth
  • Salt/ pepper to taste
  • ¼ Pound thinly sliced cooked ham
  • 6 Ounces thinly sliced Cheddar cheese
  •  8 Slices sour dough bread
  • 2 Teaspoon paprika
  • 4 Eggs

Melt 2 TABLESPOONS of the butter in a large skillet over medium heat.
Add onion to the skillet cooking until tender; add mushrooms cooking 3 minutes.
Add wine and broth to skillet; cook over HIGH until most of the liquid evaporates.
Season mixture with salt and pepper; set aside.
PREHEAT OVEN TO 400F degrees.
Butter 4 slices of the bread; place buttered side down in baking dish.
Top each slice with cheese, ham, mushrooms and onion; sprinkle with paprika.
Top with remaining bread slices; butter top of bread slices.
Bake for 10 minutes until golden brown.
Melt remaining butter in skillet over medium low; crack eggs open into skillet.
Cook eggs to desired doneness without breaking yolks.
Carefully lift eggs from skillet onto tops of sandwiches.
Lift sandwiches from baking dish to serve; 4 servings.


GRILLED ITALIAN CHEESE SANDWICH

Tomato sauce

  • 2 Tablespoons olive oil
  • 4 Cloves minced garlic
  • 1 Can (14.5 Ounces) diced tomatoes
  • 1/3 Cup chopped fresh basil (Divided)

Sandwiches

  • 8 Thin slices mozzarella cheese
  • 8 Thin slices Provolone cheese
  • 4 Ounces sliced pepperoni (Large deli slices)
  • 8 Thick slices Italian bread or sour dough bread

Preheat broiler.
Heat oil in a saucepan over medium high; add garlic stirring about 1 minute.
Add tomatoes, 1 TABLESPOON basil, salt and pepper; stir and cook 5 minutes.
FOR SANDWICHES place bread slices on a lightly oiled baking tray; broil until toasted.
Turn bread slices over; top 4 with mozzarella and 4 with Provolone.
Return to broil just until cheese starts to melt
Divide pepperoni among 4 slices and place over the Provolone slices.
Top pepperoni with 4 slices of bread with mozzarella cheese.
TO SERVE cut each in half and serve with tomato sauce.


FRIED MOZARRELLA CHEESE SANDWICHES

  • 8 Slices sour dough bread
  • 1 Pound sliced mozzarella cheese
  • 1/4 to 1/2 Cup flour
  • 3 to 4 Beaten eggs
  • Vegetable oil

Remove crusts from bread; lay out 4 bread slices.
Divide the cheese evenly among the 4 slices of bread.
Place remaining 4 slices of bread on top.
Coat sandwiches all over lightly with flour.
Heat oil in a deep fryer to 360F degrees.
Dip sandwiches in the beaten egg coating completely.
Deep fry sandwiches until golden brown; drain on paper towels.
Makes 4.

  • 2 Medium tomatoes (Chopped)

Sandwich

  • 1 Carton (15 Ounces) ricotta cheese
  • 1 Package (7 Ounces) crumbled feta cheese
  • ½ Cup chopped fresh parsley
  • 2 Tablespoons chopped green onion
  • 1 Teaspoon chopped fresh dill
  • 16 Slices rye bread
  • 8 Lettuce leaves

TO MAKE SALSA combine all ingredients, cover and chill.
TO MAKE SANDWICH combine ricotta cheese and next 4 ingredients.
Spread cheese mixture on 8 slices of the bread.
Top each with DRAINED artichoke tomato salsa.
Top with remaining slices of bread; serve immediately.
Makes 8 sandwiches.


BEEF SLIDERS

  • Prepared horseradish spread
  • 12 Slices Longhorn cheese (Cut in half)

  • 1 Pound sliced mozzarella cheese
  • 1 Jar (7 Ounces) red bell peppers (Drain and split)

FOR SANDWICHES spread seasoned mayonnaise on 1 side of each bread slice.
Top each of 6 slices with cheese (Divide cheese evenly).

Top sandwich with remaining bread slices (mayonnaise side down).
Coat griddle with cooking spray; brown sandwiches on both sides.
Serve immediately; makes 6 sandwiches.


FRENCH CROQUET MONSIEUR

  • 8 Slices Brioche bread

Top cheese with the ham then with remaining slices of cheese.

  • 1 Can (7 Ounces) whole kernel corn (Drained)

Preheat oven to 400F degrees.
Brown ground beef in a large skillet; drain.
Stir in the onion and next 6 ingredients.
Simmer for 10 to 15 minutes stirring until thickened.
Separate biscuit dough; roll 5 into 5 inch circles.
Scoop ½ cup of meat mixture onto center of rounds.
Top each with 1 slice of American cheese.
Roll remaining 5 biscuits into 5 inch circles.
Place circles on top of the cheese slices.
Press around edge of circles with a fork to seal.
Carefully lift filled pockets to baking sheets.
Bake for 10 to 15 minutes until golden brown.


MEXICAN SUB SANDWICHES

  • 1 Pound chorizo sausage
  • 4 Sub rolls (Sub rolls or French rolls)
  • Sour cream
  • ½ Pound Velveeta Mexican Spread with Jalapeno

  • 1 Tomato (Sliced)

Remove sausage from casing; cook in skillet stirring until browned.
Slice one side of each roll opening to make a pocket.
Spread inside of rolls with sour cream.

Add lettuce, avocado slices and tomato.
