Cupcakes

  • 2 Cups flour
  • 1  1/3 Cups sugar
  • ¼ cup cocoa powder
  • 1 ¼ Teaspoons baking soda
  • ½ Teaspoon salt
  • 2/3 Cup mayonnaise
  • 1 Cup cold water
  • 1 Teaspoon vanilla

Preheat oven to 350F degrees’ line cupcake tins with paper liners.

In a large mixing bowl sift together flour, sugar, cocoa powder, soda and salt.

Add mayonnaise, water and vanilla; beat until blended.

Using ¼ measuring cup fill cupcake tins; bake about 15 minutes until pick comes out clean.

Frost with cream cheese topping.

TO MAKE CREAM CHEESE TOPPING combine 16 ounces softened cream cheese, 3 tablespoons softened butter, 1 ½ cups powdered sugar and 1 teaspoon vanilla in a mixing bowl. Beat until smooth and creamy ADDING 1 tablespoon of heavy cream at a time to get spreading consistency (About 2-4 tablespoons), Use frosting bag and tip to top cupcakes. I use cookie sprinkles sometimes on top of frosting. NOTE: This topping is soft and creamy when frosting cupcakes; refrigerate after frosting and it will set up firm.

HOW TO MAKE CHOCOLATE CUPCAKES like these BROWNIE CUPCAKES

  • 4 Squares semi-sweet chocolate
  • 1 Cup butter
  • 1 Cup flour
  • 1 ¾ Cups sugar
  • 4 Eggs
  • 2 Cups pecans
  • 1 Teaspoon vanilla

Preheat oven to 350 degrees.

Melt chocolate and butter together and cool.

Mix sugar and eggs with the chocolate mixture.

Add in the flour, stirring as little as possible; then stir in the nuts and vanilla.

Fill cupcake liners ½ full with batter and bake about 25 minutes or until pick comes out clean.


FUDGE CUPCAKES

  • 3 Ounces cream cheese
  • 1 Egg 1 Egg yolk
  • 4 Ounces shredded semi-sweet chocolate
  • 1 ½ Cups sifted flour
  • ¼ Cup cocoa
  • ½ Teaspoon salt
  • 1 ¼ Cups sugar
  • ¾ Teaspoon baking soda
  • ¾ Cup water
  • 1/3 Cup oil
  • 1 Egg white
  • 1 Tablespoon vinegar
  • 1 Teaspoon vanilla
  • ¾ Cup chopped almonds
  • ¼ Cup sugar

Preheat oven to 350 degrees.

Mix ¼ cup sugar with the almonds

In a bowl combine the cream cheese, egg, egg yolk, and ¼ cup sugar.

In another bowl combine flour, 1 cup sugar, cocoa, baking soda and salt.

Add to the dry mixture the water, oil, egg white, vinegar and vanilla and mix well.

Fill cupcake liners in pan ½ full with chocolate batter.

Spoon 1 tablespoon cream cheese mixture on top of batter.

Sprinkle top of cream cheese with the almond mixture.

Bake for 25 to 30 minutes.

CHOCOLATE CUPCAKES

Preheat oven to 350 degrees.

  • 1 ½ Cups flour
  • 1 Cup sugar
  • ½ Cup unsweetened cocoa powder
  • 1 Tablespoon instant espresso powder
  • 1 Teaspoon baking soda
  • ½ Teaspoon salt
  • ¾ Cup warm water
  • ½ Cup vegetable oil
  • 1 Large egg
  • 2 Teaspoon vanilla

Preheat oven to 350 degrees.

Combine in a mixing bowl the flour, sugar, cocoa, espresso, soda and salt; stir to blend.

Whisk in the water, oil, egg and vanilla until well blended.

Fill cupcake liners 2/3 full with batter.

Bake 20 to 25 minutes or until pick comes out clean.

When cool, frost.

CHOCOLATE BUTTERCREAM FROSTING

  • 1 Box confectionary sugar
  • ½ Cup soft butter
  • ½ Cup cocoa powder
  • 1/3 Cup milk
  • 1 Teaspoon vanilla

Beat all ingredients until smooth and fluffy.

Spread on cupcakes.


CREAM FILLED CUPCAKES

  • 2 Cups flour
  • 1/3 Cup unsweetened cocoa powder
  • 1 Teaspoon baking soda
  • 1/8 Teaspoon salt

Beat shortening in a large mixing bowl; add sugar and beat until blended.

Add eggs one at a time beating after each addition; add flour alternately with water beating on low.

Beat on medium until combined; fill paper lined cupcake tins with ¼ cup batter.

Bake about 15 minutes or until pick comes out clean; remove from oven.

After 5 minutes of cooling remove cupcakes to cooling rack; cool completely.

Using pastry bag with tip for filling cupcakes force cream filling in through top of cupcakes.

Top cupcakes with chocolate glaze; top with maraschino cherry or decorate if desired.


VANILLA CREAM RECIPE

This vanilla cream recipe can be used in most gourmet cupcake recipes.

  • 3 Cups powdered sugar
  • ½ Cup shortening
  • ¼ Cup water
  • 1 Teaspoon vanilla

Combine all ingredients and beat with electric mixer on low to medium speed until blended; beat on high until fluffy.


CHOCOLATE GLAZE RECIPE

  • 2 Cups miniature marshmallows
  • ¾ Cup sugar
  • ½ Cup evaporated milk
  • ¾ Cup butter
  • 1 Cup semi sweet chocolate chips

Combine marshmallows, sugar, milk and butter in a medium saucepan; stir over heat until boiling.

Boil 3 minutes stirring constantly; remove from heat and stir in chocolate chips until melted.

Place bottom of pan in cold water; beat mixture until begins to thicken.


BLACK BOTTOM CUPCAKES RECIPE

  • 6 Ounces cream cheese
  • 1 Egg
  • 1 1/3 plus 2 tablespoons sugar
  • Salt divided
  • 6 Ounces semi sweet chocolate cut in small pieces
  • 1 ½ Cups sifted flour
  • ¼ Cup cocoa powder
  • 1 Teaspoon baking soda
  • 1 Cup water
  • 1/3 Cup vegetable oil
  • 1 Tablespoon vinegar
  • 1 Teaspoon vanilla
  • ½ Cup chopped walnuts

Preheat oven to 350F degrees.

Beat cream cheese until smooth; add egg, 1/3 Cup sugar and pinch of salt.

Beat until mixture is well blended; stir in chocolate pieces and set aside.

Sift into a separate bowl the flour, 1 cup sugar, cocoa powder, baking soda and ½ teaspoon salt.

Combine water, oil, vinegar and vanilla in small bowl and blend.

Add oil mixture to flour mixture; beat until well blended.

Fill paper lined cupcake tins with batter 1/3 full; place large teaspoonful cheese mixture on top.

Combine remaining 2 tablespoons sugar and walnuts and mix well; sprinkle on top of each cupcake.

Bake for 35 minutes or until tester comes out clean; remove and cool on racks.
