How to Make Appetizers 

The first thing to know when learning how to make appetizers is just what is an appetizer. It will help to achieve Painless Cooking by learning a little about this type of food. Appetizer recipes can be for crunchy salads, clear soup recipes, seafood cocktails, fruit cups or light canapés. These “teasers” which are meant to excite the hunger, are served at the table before dinner is served. These are carefully planned with the dinner and are a hint to the dinner which will follow. Before dinner appetizer recipes are always light, a little more elaborate and in individual servings. It is advisable to keep several favorite easy appetizers on hand that that you can make for those times when you are extra busy.

If a cocktail hour is planned prior to the dinner, plates of appetizers can be passed around to be eaten with the drinks. These appetizer recipes must be finger foods which are easy to manage while standing. The time of the cocktails and the type of dinner to follow should be considered when planning the appetizers. Take your guests into consideration when preparing your menu of appetizers. If they like simple basic foods, don’t serve all new fancy appetizers. It is best to make mostly basic foods and add only a few fancier appetizer recipes.

  • 2 Whole heads garlic
  • 4 Sprigs fresh thyme
  • ½ Teaspoon fresh rosemary
  • 2 Cups grated Monterey Jack cheese
  • 2 to 4 Tablespoons olive oil
  • Fresh ground black pepper to taste
  • Pink and green peppercorns for garnish

Preheat oven to 350F degrees.
Cut heads of garlic in half; place 2 sprigs thyme and ¼ teaspoon rosemary between garlic halves.
Wrap garlic in 2 thicknesses of foil and place in oven for 30 minutes.
Remove from oven, unwrap and cool; peel garlic.
Place grated cheese and herb roasted garlic in food processor and process briefly.
Add ground pepper and 2 tablespoons olive oil.
Process until smooth and creamy adding more oil if needed.
Garnish with pink and green peppercorns.
Serve in crock with toasted bread.


  • 1 Package (8 ounces) cream cheese
  • 1/8 Cup mayonnaise
  • 1 to 3 Teaspoons Dijon mustard
  • 2 Teaspoons horseradish
  • 1 Clove minced garlic
  • 1 Teaspoon dill weed
  • 1 Teaspoon dry thyme
  • 1 to 2 Tablespoons dried chives

Combine all ingredients and beat with electric mixer until smooth.
Refrigerate to give added firmness; garnish with parsley
Serve with assorted crackers.


  • 3 Packages (8 ounces each) cream cheese
  • 2 Packages (6 ounces each) frozen crab thawed and drained
  • 3 Cloves minced garlic
  • ½ Cup mayonnaise
  • 2 Teaspoons prepared mustard
  • ¼ Cup sherry
  • 2 Teaspoons powdered sugar
  • 1 Teaspoon onion juice
  • Salt to taste

Combine and mix all ingredients in saucepan; heat over medium low stirring until smooth.
Serve hot; serves 8 to 10.
