Easy dessert recipes top the list of my cooking passions. I have made many more desserts in my life time than any other group of foods. Most people have a sweet tooth and I am certainly no exception! Americans consume more sweets in every form than any other group in the world. Some say that we move faster and farther than any other national group so we need the energy. Sugar in every form feeds that dynamic energy. That sounds like a good excuse for me!


I have so many great recipes that I am going to attempt to break them down into categories. I am sure that I have recipes in the thousands that most people would consider to be desserts. It is almost impossible to deal with all these recipes at once. First, we have the cake recipes, cheesecake recipes, pie recipes, brownie recipes and cookies. I have set these aside because each one of these topics has so many variations. I am working now to get my cookie recipes together in a book for Christmas. I have hundreds of these alone. "My Favorite Chocolate Cakes" is already available.This is an example of why I am going to cover each one of these independently. I will share many of my recipes with you for each topic.



Then we have the fruit desserts like the banana recipes, strawberry recipes and the apple recipes which I will cover separately, also. The chocolate dessert recipes like the fruit recipes produce products in many different forms. We have cakes, pies, cookies, muffins and many other desserts made with these ingredients.


This gets us down to a good starting point for easy dessert recipes. I am going to focus on pudding recipes like the cream Brule, gelatins and recipes which contain a combination of ingredients like tiramisu. Puddings are among the most popular desserts served. They are mostly easy and economical. A well prepared pudding is a well liked dessert. Like other dishes, a good recipe produces good results.



There are six types of puddings: steamed, boiled, baked, soufflé’, chilled and frozen. The three most favored are the baked, chilled and soufflé’. Steamed pudding is very heavy and should be served in colder weather. This is why they are more popular at Christmas time. Frozen desserts are more like ice cream and are often listed as such.



DUMP CAKE RECIPE


Many easy dessert recipes are quickly made by using packaged ingredients like this delicious dump cake recipe.


  • 1 Large can crushed pineapple

  • 1 Can cherry pie filling

  • 1 Box yellow or white cake mix

  • 1 Cup butter cut in small pieces

  • 1 Cup chopped pecans

  • 1 Can coconut

Pour pineapple in greased 9 X 13 inch baking pan.

Spread cherry pie filling over top of pineapple.

Sprinkle dry cake mix over top of pie filling.

Slice butter pieces over top of cake mix.

Sprinkle coconut and pecans over the top.

Bake at 325F degrees for 1 hour.

BLACKBERRY DESSERT RECIPE


  • 1 ¾ Cups vanilla wafer crumbs divided

  • 2 Eggs separated

  • 1 Cup powdered sugar

  • ½ Cup softened butter

  • ¾ Cup chopped pecans divided

  • 2 Cups fresh blackberries

  • ½ Cup sugar

  • 1 Cup whipping cream, whipped

Prepare a day ahead.

Sprinkle 1 cup crumbs evenly in 9 X 13 inch pan.

Beat egg whites until stiff and set aside; beat egg yolks separately.

Cream powdered sugar and butter until smooth; beat in egg yolks.

Fold egg whites into creamed sugar mixture; spread over crumbs in pan.

Sprinkle ½ cup chopped pecans over the top.

Lightly crush berries with sugar and spoon over pecans.

Spread whipped cream over top of berries.

Combine remaining nuts with remaining crumbs and sprinkle over whipped cream.

Chill for 12 hours.

PERSIMMON PUDDING RECIPE


  • 2 Cups persimmon pulp

  • 2 Cups brown sugar

  • 3 Eggs, slightly beaten

  • 2 Cups flour

  • 1/3 Teaspoon nutmeg

  • 1 Teaspoon cinnamon

  • 2 Teaspoons baking powder

  • 3 Cups milk

  • ½ Cup melted butter

  • 1 Teaspoon vanilla

SAUCE:


  • ¾ Cup white sugar

  • 1 Tablespoon flour

  • 1 Cup boiling water

  • ¼ Cup butter

  • 2 Teaspoons vanilla

Preheat oven at 350F degrees.


Combine the persimmon pulp and sugar in a mixer bowl. Beat in the eggs. Combine the flour, nutmeg, cinnamon, and baking powder. Add dry ingredients alternately with the milk to the persimmon mixture. Beat in melted butter and vanilla. Pour batter into a greased 10x14 inch baking pan (or smaller for thicker pudding). Bake for 1 hour.


Sauce: Combine all sauce ingredients, except vanilla in a pan. Cook over medium heat until thick. Add the vanilla and pour over hot pudding.




Many easy dessert recipes can be made by using a combination of readymade products. When you serve some of them, everyone will think “What a wonderful creation”. The whole project will take very little time to make.

LEMON DESSERT RECIPE


CRUST:


  • ½ Cup soft butter

  • 1 Cup flour

Combine flour and butter and press into a 9x13 inch baking pan. Bake at 350F degrees for 15 minutes. Cool.


LAYER 1:

  • 1 Cup powdered sugar

  • 8 Ounces soft cream cheese

  • 1 Cup whipped topping

Beat cream cheese and sugar together until smooth; Fold in the whipped topping. Spread over the cooled crust.


LAYER 2:

  • 2 Small packages instant lemon pudding mix

  • 3 Cups milk

Mix pudding with the milk until blended and begins to thicken. Pour over layer 1.


LAYER 3:

Top completely with whipped topping; Refrigerate for a couple of hours before serving.
